ased in Rayleigh, Essex, Direct Cooling Services London Ltd specialise in the design, installation and maintenance of cooling services, with a specific focus on delivering works within the hospitality industry. The company has been in operation for more than 21 years and has the capabilities to provide full air conditioning, ventilation, heating and control systems (BMS) where required. Over the years, Direct Cooling Services London Ltd has built up a strong portfolio of projects, boasting some of the biggest names in the industry. From restaurants to hotels and more, Direct Cooling Services London Ltd provides a tried and trusted service that is second to none. One of the company’s largest clients is Citadines – part of the Ascott group – where Direct Cooling Services London Ltd has recently provided services to meet the hotelier’s needs, including the replacement of the air conditioning system at the 230-bedroom Cavendish Hotel. The existing ventilation system at the Cavendish Hotel was in need of an update, in order to provide a more comfortable environment for guests.

Work began on the project in late 2017 and was completed ahead of schedule at the beginning of 2018. As all work was undertaken while the hotel remained open the project team had to work around the logistics of the hotel. Martin Ball, Direct Cooling Services London Ltd, commented: “The original equipment at the hotel was Daikin VRV II (R407c), which was 15 years old. We calculated the COP (Coefficient of Performance) to be around 2.50 or less on these systems. “With careful planning my team was able to increase the capacity of the systems by 15% and change 230 indoor units and 230 BS boxes with minimal disruption on the live hotel.” Ray Klova is the chief engineer for the Cavendish Hotel. Direct Cooling Services London Ltd worked closely with Ray to deliver this project. Speaking to Premier Hospitality, Ray said: “The system that was in place at the Cavendish Hotel was in need of updating. It was an old system and every summer and winter we would struggle, so we replaced all of the VRV systems, including new fan units on all of the floors. “In total, Direct Cooling Services London Ltd completed 230 bedrooms and one office – so it was a big job.” After the installation Direct Cooling Services London Ltd monitored the energy usage of the hotel and found they had saved around 60-70% on electricity consumption allowing the hotel to enjoy a high payback on the equipment installed. Martin said:

“The hotel now enjoys a COP of between 5.66 and 8.24 and this was made possible by utilising Daikin’s unique VRT Technology (Variable Refrigerant Temperature) allowing the rooms to be at their desired temperatures and the outdoor units to consume less energy.” The air conditioning project was conducted hand-in-hand with a soft refurbishment, which included painting the bedrooms and bathrooms. The result is a stunning and comfortable update which reflects the prestigious nature of the hotel. Ray said: “Direct Cooling Services London Ltd were very organised and I was very happy with their technicians. I had a schedule for my team and they had a schedule for their team and it all came together perfectly. “We are now planning future works to replace the existing systems in our lounge, which hopefully Direct Cooling Services London Ltd will be a part of.” Additional projects undertaken by Direct Cooling Services London Ltd have included the ten-floor North House, home to a branch of the Royal Bank of Scotland; a Furniture Barn store in Essex; and Novotel Heathrow for the Nine Group, installing a full air conditioning system throughout. Meanwhile, beautifully situated on a private estate on the edge of Killarney National Park, Cahernane House Hotel was constructed in 1877 and was formerly home to the Herbert Family. The entrance to the hotel is framed by a tunnel of greenery which unfurls to reveal the beauty of this imposing Manor House. Following a €6 million renovation programme, the hotel is a hidden gem when it comes to both corporate away days and company retreats. And finally, The Coach Complex in Banbridge, one of Northern Ireland’s most popular hospitality destinations, has unveiled a dramatic one million pound transformation to its renowned Coach Nightclub. The Coach Nightclub has a rich history and reputation having played host to a variety of high-profile acts and DJs. Earlier this year, the venue closed down for 6 weeks while a wide reaching renovation was carried out. Initially planned as a production upgrade, the project transformed into a nightclub wide renovation. With all this as well as a preview of both the Independent Hotel Show and the Restaurant and Bar Design Show it’s time to sit back and tuck into another helping of Premier Hospitality. Enjoy!

COMMITMENT TO QUALITY In an effort to ensure its guests enjoy the best dining experience possible, chefs at Breadsall Priory Marriott Hotel & Country Club have embarked on a farm training experience in Derby. As part of this, two members of the kitchen team from the Derbyshire-based hotel were invited to learn all there is to know about producing the best quality steak. Executive Chef, Sathiskumar Devadas, and Sous Chef, Lukasz Markowc, attended the Cast Iron Steak Academy workshop, where they were educated on the importance of properly nurturing cows, in a bid to produce excellent meat. They were provided with insights into the appropriate grains to feed the animals, and how to properly treat them, which all has an effect on the quality and flavour of the steak it produces. As well as this, they were taught the importance of marinating and wrapping meats to achieve great tastes and textures. It is from this experience that the chefs hope to improve the overall guest experience at the hotel, as Sathiskumar Devadas comments: “In our industry, it is so important to take great pride in our work. A meal has the potential to make or break a guest’s experience, so we like to put appropriate measures in place to ensure they are benefitting from the best food and service possible. The Cast Iron Steak Academy workshop provided us the opportunity to learn about the type of meat that properly nurtured cows deliver, which will better enable us to identify the best quality cuts for our guests. “We’ll be utilising all we learnt to inform our on-going efforts to continuously refine our practices at Breadsall Priory. As well as updating chefs on the latest methods of cooking and storing meat, we’ll also be transferring the insights to our waitstaff. This team will share this information with our guests to help them make decisions about their food choices; particularly when it comes to advising on the optimum preparation for their cut of steak. LIFESTYLE CONCEPT FOR MANCHESTER Following the success of its London and Edinburgh venues, Locke Hotels’ design-led aparthotel concept is coming to Manchester this October. Whitworth Locke will open in the heart of the city and is set to be Locke’s most ambitious endeavour to date. Previously a historic cotton mill, Whitworth Locke is being transformed by acclaimed New York architects and designers Grzywinski+Pons. The finished development will celebrate the city’s industrial past whilst embracing its dynamic and creative present and future. The new lifestyle destination will be the organisation’s largest venue to date, comprised of 160 stylish studios and one-bedroom suites. Central to Locke’s mission, the property’s socially immersive spaces will include Locke Works (coworking space), a CrossFit Gym and yoga studio, a cocktail bar, a wine bar, healthy all-day dining, apparel kiosk and partnership with local Foundation Coffee House. Eric Jafari, Locke’s Co-Founder and Creative Director, said: “Manchester was the natural choice for our third venture. The city is dynamic, progressive and innovative, comprised of like-minded locals and brands. Whitworth Locke seamlessly blends the gritty, industrial heritage of the city with the design features and luxe interiors synonymous with the Locke brand.” Each studio revolves around Locke’s bespoke L-shaped sofas, allowing guests to work, lounge or socialise in comfort. The result is a modern take on the aspirational second home. Bespoke kitchens are fully-equipped with utensils, dishes and a dishwasher to create a welcoming space to stay - whether it’s for a weekend or a week. Ballyseede Castle, Co. Kerry
Built circa 1590, Ballyseede Castle is situated within 30 acres of ancient woodland and garden. Kerry’s only castle hotel, the history and grandeur of Ballyseede has been retained throughout – from the 44 en-suite bedrooms to the awardwinning restaurant. Each bedroom is warm and spacious complete with carefully considered decorations and homely complimentary amenities. In March 2018, 16 new bedrooms opened including 2 suites, 4 junior suites, 7 superior rooms, 1 family room and 2 double rooms. Prior to that, in 2017 a new orangery was created, providing a suitable private pre-drinks reception area for weddings and their guests. Weddings are very much at the heart of Ballyseede, providing a stunning backdrop as well as all round service for a couple’s special day.
Bellingham Castle, Co. Louth
One of the ancestral homes of the Bellingham family, Bellingham Castle was built in the 17th century. The property was purchased in 2012 by the Romantic Castles group, who subsequently embarked on an ambitious two-year renovation and restoration of the venue. Each of the castle’s 19 bedrooms was uniquely designed to complement the architecture, with details exclusive to each room. In addition to this standout collection of guest rooms, Bellingham is also home to a number of formal lounges and reception rooms, from The Library and The Buttery Kitchen to The Oratory and O’Bryens Bar. The Bute Suite has been gracefully designed with classic painted panelling, crystal chandeliers and French doors leading out into the castle’s rose garden and weir.

Cabra Castle, Co. Cavan
Since 1991, Cabra Castle has been extensively refurbished and expanded from 24 bedrooms to incorporate the former Courtyard and Gate Lodge. The total number of bedrooms was brought to 105 with the addition of six cottages that were also built on the estate. Recent redevelopments include work to the ballroom and bridal suite, the Derby Bar and Courtroom restaurant. Significant upgrades are also being made externally and 2019 will see a number of exciting additions such as a redevelopment of the bar terrace and patio area and the introduction of an outdoor cinema.

Midland Heating and Plumbing Ltd. are specialist mechanical contractors operating via two divisions: Kerrigan Mechanical, serving the commercial sector, and Midland Renewables Heating and Plumbing, serving the domestic sector. The company specialises in the supply and installation of heating systems together with ventilation and extract systems, as well as providing a comprehensive range of renewable energy solutions for both domestic and commercial projects. Having been in operation since 1998, Midland Heating and Plumbing Ltd. has built up a diverse range of clients within the construction, healthcare, hospitality, commercial and residential sectors. Clients include: Cosgrave Developments, McAleer and Rushe, HSE, Parson Building Services, IMAC, Markree Castle, Glenveagh Properties, Cunningham Contracts, Vision Contracting, BAM, Bennet Construction and Kercon Construction, amongst others. Working on the Markree Castle project with Howard Corscadden, Niall Smith Architects, Audrey Gaffney Associates and Bernard Smith, Midland Heating and Plumbing Ltd. was an integral part of the refurbishment works. The company was responsible for the supply & installation of the complete mechanical services package for the hotel, including heating, plumbing, ventilation and air conditioning systems – inclusive of the supply and fit of sanitary ware. Markree Castle, Co. Sligo
Markree Castle was built in 1802 and enjoys listed status as a protected structure within the Sligo Development Plan. In total the castle boasts 30 bedrooms plus self-catering cottages. There is also a three-room bridal apartment to complement the onsite chapel. The castle is home to a number of stunning architectural features including a beautiful vestibule stone arch and a grand Tudor staircase, which leads to the main reception with its large open stone fireplace and original stained-glass window. Many of these details were designed by well-known Irish architect Francis Johnston. A restoration of the entire castle was completed in March 2017.

Audrey Gaffney Associates
Awarding-winning commercial architectural design company Audrey Gaffney Associates has been integral to the transformation of the Romantic Castles of Ireland portfolio. The company has worked on multiple interior design aspects of each hotel, helping to create stunning destinations that blend rich history with modern functionality. Premier Hospitality recently sat down with Audrey Gaffney, to find out more about her work on this unique collection of venues.
When did your working relationship with Romantic Castles of Ireland first begin? “We would have started working with Cabra Castle in 2009 on the complete refurbishment of their ballroom. From there, like a lot of operational hotels, the following year we were given another element – a bedroom block. The block would’ve been completely refurbed in terms of acoustics, upgrading electrical works and lighting. We’ve nearly done all the elements within Cabra now. At this stage I think there might be one or two rooms left. “In 2013, we worked together on Bellingham Castle and that was a new purchase for them. That was completely gutted and another conservation project. Cabra is very much a classic medieval castle whereas Bellingham had more of a stately home feel to it. It needed a complete upgrading of works. As much as we can, we research the history and what it would’ve looked like or what the style of the era was.”
And from there you moved onto a couple more recent projects?
“We completed some work on the Orangery in terms of the interior design at Ballyseede. We also worked with them on Markree Castle. It was operational right up until May 2016 and then we began the works straight away on it. The thing about Markree is that it was extended over the years. The styles are very different in that you have Tudor, Gothic, Victorian and some Georgian. You read it as per what room you’re in, so the dining room will differ to the entrance. “In the basement of Markree, it was really just used for storage and ‘back of house’. We completely gutted this to create an entertainment space. The heating and air-con had to be installed but still integrate within conservation requirements. There was a lot of organising of how that could happen and how it would look afterwards, where these details needed to be hidden.”

A lot of the challenges are more to do with when you’re maintaining the structure What are some of the considerations you have to make with projects like this? “Initially, when we take on any project we look at it from how it’s going to be branded and how it’s going to be sold. You might have a tendency to think a castle is a castle but it has its own history and style. It’s about bringing it back to reflect that but also reflecting a customer’s needs. “Both Bellingham and Markree are exclusive wedding venues, so you have to consider the needs of the bridal party. In both we’ve put in a little pantry kitchen where someone can go make a cup of tea or whatever. In both venues they are hugely popular.”

Kavanagh Landscapes Ltd is a family run landscape design and construction company that has been in operation for over 25 years. The company works extensively in both the commercial and private sectors. Previous clients include hotels, semi-state bodies, estate restoration and private residences. Kavanagh Landscapes Ltd became involved with Romantic Castles of Ireland in 2012 with their acquisition of Bellingham Castle. The company undertook an exciting 9 month project consisting of bringing back the grounds to their former glory. With a nod to the past a new classically themed wedding garden was created. Since then, Kavanagh Landscapes Ltd has worked on all remaining castles in the group. It means a great deal for Kavanagh Landscapes Ltd to be involved with Romantic Castles of Ireland. “When you’re an interior architect, that’s part of what you love doing in terms of researching the history, investigating what it would’ve been and then bringing it back to life. If you’re driving passed an old building, when you see the potential as to what it could be but it’s just left to ruin, it’s heart-breaking. “A lot of the challenges are more to do with when you’re maintaining the structure and the integrity of the building but you need to get the requirements for fire and mechanical into it. You don’t want to disturb how it looks and the challenge is getting around this.”

And finally, what does it mean to be involved in something like this?
“When you’re researching into a new property and you’re finding out things that took place such as royal weddings, it’s really fascinating to find out that history. “When a space works in terms of the function and when a building works in terms of aesthetics, you get a customer experience at the end where people go ‘wow’. They probably don’t realise the heartache to get it to that level but for a design team that’s something we are hugely proud of. We would normally concentrate at the very start in terms of our concept and branding on what our interiors are going to look like. With a castle it’s more about researching the history and bringing that through right to the end of the project. That’s the customer experience you receive with a castle.”

Killarney’s Hidden Gem
eautifully situated on a private estate on the edge of Killarney National Park, Cahernane House Hotel was constructed in 1877 and was formerly home to the Herbert Family. The entrance to the hotel is framed by a tunnel of greenery which unfurls to reveal the beauty of this imposing Manor House. Following a €6 million renovation programme, the hotel is a hidden gem when it comes to both corporate away days and company retreats. Escape from the busy office environment and retreat to the intimate settings of Cahernane, where a professional team will ensure your event is a complete success. Stephen Loftus, Chief Financial Officer and Commercial Director at the PREM Group, which owns the hotel, told Premier Hospitality: “We acquired the hotel in May 2016 and the property was in very poor condition because it had been neglected for

decades. We then set about putting a masterplan in place to restore the property back to its original glory and to add to and to improve it over the next few years. “The work got underway pretty much immediately because we had to tackle issues like fire and safety and then once this had been addressed, we set about restoring the original house within a few months of acquiring the property.” With 40 beautiful guest rooms, guests will enjoy luxurious accommodation with glorious views over the mountains and National Park. There are 12 signature rooms located in the original Manor House, individually named and decorated. Each room showcases period features such as sash
Tara Crystal Chandeliers
Tadhg Dineen of Tara Crystal Chandeliers worked closely with Stephen Loftus of the Prem Group and Julie Goggins who looked after all of the interior fit out of Cahernane House Hotel. Tadhg said he was passionate about period style houses and was delighted to be asked to design and make chandeliers in the first phase for the dining areas of Cahernane House Hotel. Tadhg commented: “Every chandelier we make is bespoke. We spend time in the hotel to get a feel for the mood then our design team create a chandelier which is in keeping with the room – getting the design and size right takes years of experience. “Once the chandelier is made this is only half the job done. We then have the delicate job of transporting, rebuilding on site and finally fitting the chandelier. The simplest job of all, with the most satisfaction, is switching the chandelier on. It is only then that we can give a sigh of relief and the job is done.” The job turned out magnificent and Tara Crystal was asked to design chandeliers for the second phase reception area which required four chandeliers. Following this, the company set to work on a truly magnificent chandelier to hang over the oak stairs, and as the corridors leading to the bedrooms needed light Tara Crystal fitted crystal wall lights to provide a lovely warm glow. Tadhg said: “The staff at Cahernane House Hotel gets a great buzz from seeing residents blown away with the chandeliers – they are a great talking point! “People are really delighted to hear that our family business is keeping the tradition of crystal-making alive in Waterford.”

windows, high ceilings and elegant mouldings. The rich colour palettes and sumptuous antique furnishings are evocative of a bygone era. Sensitively restored and eminently comfortably, all 28 guest rooms in the garden wing were completely renovated by spring 2018. The rooms feature French doors onto either a ground floor patio or a first floor balcony, commanding stunning views over the local landscape. Cahernane House Hotel also has several meeting rooms on offer to suit your every need, all with natural daylight. There is a library which can cater for up to 25 guests, the Pembroke suite which caters for up to 30 guests and the drawing room which can cater for up to 60 guests. Each meeting room has complimentary Wi-Fi and Audio Visual equipment. An extensive breakfast menu is served in The Herbert Restaurant each morning with delicious options such as Local Kenmare salmon, French toast and of course a traditional Irish breakfast. Avondale Projects specialise in refurbishment and extension projects for the residential and commercial sector, including historical and listed buildings, as well as work on new builds. Company owner, Noel Leahy has more than 18 years’ experience in the industry and within this time has worked on a range of projects, including The West End House, The Black Sheep Hostel, Anáblathá and Tiernaboul National Schools, Kenmare Adult Education Centre and more than 30 one-off bespoke new builds. Most recently, Avondale Projects has worked alongside Prem Group on the extensive refurbishment of Cahernane House Hotel. The initial works involved repairing the roof to the main house, restoring the original slate and re-leading the valleys, before taking on more work at the hotel. Noel Leahy, Avondale Projects, said: “During the first phase, my team undertook the restoration of the original timber sash windows, restoring them fully, thus preserving the integrity of this historic old house. This phase of the renovations saw the Herbert Restaurant tastefully redecorated, the bedrooms and attic in the main house fully renovated and brought up to current legislative specifications.” Having delivered this phase successfully, Avondale Project teamed up with Prem Group over Winter 2017/ Spring 2018 to refurbish the “new wing” of the hotel, along with the modernisation and decoration of the original cellar bar, making it contemporary and elegant. was also added to cater for bar food for residents and visitors alike. I enjoyed networking with local trades and subcontractors from Killarney, and together we worked to retain the original skilled craftsmanship and manual labour that built the hotel. “We worked with top class architects and interior designers to create and deliver an ambience of luxury for guests at Cahernane House Hotel and we look forward to undertaking the refurbishment of the Coach House later this year, as Prem Group continues their committed restoration of the Cahernane House Hotel.” Noel added: “It is great to see Cahernane House Hotel being brought back to its former glory, as a lot of Killarney people have links to the house, including my wife, Simone. Her great grandfather was a grounds man and gatekeeper, and her great grandmother was a housekeeper, so it is a very special place.” Avondale Projects strive to be the best, ensuring attention to detail and a goal of delivering a top quality finish. We hope to get this underway in 2019.” The spacious gardens of Cahernane provide an ideal environment for fun outdoor pursuits. Set in peaceful, secluded gardens, the

only sounds you may hear are the birds singing or the cows bellowing. Whether you need to stretch your legs after a long meeting or get the team involved in something a little more energetic, the hotel can arrange a host of activities. “The grounds are fantastic,” said Stephen. “Cahernane House is set in six acres adjoined to working farms, which are in the National Park of Ireland. In the National Park you have all of the deer, cattle and sheep and many people often comment on the nature surrounding the hotel and how lovely it is.” Following the hotels renovations, feedback about the work has been positive with numerous guests describing the Manor House as a hidden gem in Killarney and indeed in the country. Commenting on the feedback and the projects importance, Stephen said: “If you visit TripAdvisor and look at the comments - they are incredible. People describe it as a hidden gem so the feedback has been fantastic and we are very pleased with the progress we have made to date. “This is a very important project for us. he Works in Chelmsford has opened its doors and is serving ice cream, waffles, savoury food and cocktails to diners. Located at 5 Springfield Road, Chelmsford, The Works is open until 10:30am on weekdays and 11pm at the weekend. The Works is an eat-in or takeaway fast casual urban style restaurant. Whether you want to sit and relax or take a delicious treat away with you, The Works is the place to meet, eat and treat. Guests are taken into the seating areas served with a friendly and unique table service style where you are made to feel at home. The restaurant is run by manager Mark Percival who commented: “Everything from the décor; to the brand’s personality and the way they have put it all together is infectious. The Works’ entire ethos is centred around family, directly and indirectly. You feel as if you are part of a huge extended family, which is what I think is important nowadays for any restaurant business, whether you’re a customer or a member of the team. I am very much someone who wants to meet our customers, get to know them and joke with them. Being part of the whole customer service experience is crucial in my book. “It’s an exciting time for everyone involved and we can’t wait to put big smiles on the faces of Chelmsford!” Work on the project was undertaken by Brown Studio and has been designed with a modern interior which includes renovated cinema chairs mixed with leather chairs and bar stools. Premier Hospitality magazine spoke to Brown Studio Project Designer Leanna Ioannou about the project.

The Works’ entire ethos is centred around family How did you get involved with the project? “We have worked with the client before and worked on the High Wycombe site for him so he approached us and asked us to design this new space.
Were you given a brief for the project?
“As the client knows what he wants he gave us a brief so we worked from that. He is really into the industrial look, atmosphere and that overall look and feel so we went to reclaimed yards and found industrial looking items to put into the space. The site was an empty shell when we started so we transformed it from that.”
What was the timescale of the project?
“We spent about a month on site but before that we were working on it from around November 2017.”
Have you heard any feedback about what people think of the space? “We have had really good feedback. I went to one of the opening days and it was really busy with people coming in and out so that was nice to see.”
Can you guide us around the space as if we were walking in for the first time?
“There is an area of softer seating to the right and this is a new aspect to the restaurant which hasn’t been done in pervious sites. We have used soft leather seating and couches and then we have some high seating to break that up, alongside regular seating with a mixture of square top and long tables. We have used all industrial and reclaimed looking furniture and have mixed that with the brand colours of dark greys and burgundy reds.”

How important has this project been for you to be involved with?
“It was one of my first projects with Brown Studio so it was a nice one to get started with. It was really hands on and the client liked going to the reclaimed yards and helping source the items so we did all of that together. ans’ Bar & Grill, a new neighbourhood restaurant in Chelsea’s Pavilion Road, has opened for business and features a striking, contemporary interiors scheme created by leading hospitality and F&B designers Goddard Littlefair. The new venue, conceived of by the team behind Chewton Glen, Lygon Arms, Cliveden and 11 Cadogan Gardens, will offer an exciting new extended café-bar space and restaurant, including a newly-covered former courtyard space, within the 11 Cadogan Gardens hotel, and is set to appeal to a wide range of day-to-night guests. Hans’ Bar & Grill was named in honour of Cadogan family ascendant Sir Hans Sloane, one-time physician to the royal family and President of The Royal Society, as well a celebrated natural historian, whose incredible collection of specimens and artefacts led to the founding of The British Museum. Both London’s Sloane Square and Sloane Street were named in his honour. The new 106-cover restaurant encompasses 18 covers within the café-bar area, directly inside the Pavilion Road entrance; 46 covers in a covered courtyard area, forming part of the main restaurant, plus a further 42 covers in the dining area of the main hotel building. A further private dining space, ‘The Curio’, inspired by Sloane’s love of adventure and discovery, can seat a further 16 guests and is located directly opposite the internal restaurant entrance. “We’re very excited about the opening of our first London restaurant project”, Goddard Littlefair Co-founder and Director Jo Littlefair commented. “As a design studio, we’ve built an extensive portfolio of residential developments in London and an extensive portfolio of hospitality projects outside the capital, so it’s great now to have a completed restaurant project in the same city we work, eat and play in – and also to have been able to do it for such a prestigious client and in such a great location.”

The first café-bar space is located within a converted former mews garage on Pavilion Road, where it sits alongside other converted garages to either side to form a new suite of upmarket, independent boutique retailers, from barbers and cheesemongers to specialist purveyors of wine and bread. Architectural works on this, as well as the courtyard refurbishment, were carried out by ReardonSmith Architects. For the restaurant at Hans’ Bar & Grill, Head Chef Adam England (previously of Le Pont de la Tour) has created an all-day seasonal menu, rooted in British produce and underpinned by his classical cookery skills, from signature duck breast to confit salmon, goats curd and cucumber, and his take on a classic veal carpaccio. Taking inspiration from Sir Hans Sloane, credited with bringing cocoa to the UK, chocolate desserts and signature hot chocolate drinks will also take centre stage. For early risers and weekend shoppers, Adam and his team have created a breakfast and brunch menu, which will be available every day from 7am until midday, featuring favourites such as eggs benedict and steak tartare, alongside fresh-pressed juices and smoothies. Design Walk-through: The Pavilion Road entrance features glazing to either side and a black-painted timber surround. Goddard Littlefair created all signage for the venue, applying new branding by Doodle, which includes fascia and projecting signs, as well as wayfinding, menu A-boards and external menu boxes. graphic elements, such as takeaway bags and cups for daytime coffee and grab’n’go orders, are also by Doodle. The signage creates a discreet balance between the hotel’s traditional heritage positioning and the more contemporary styling of the restaurant. The bright and airy café-bar space has a clean and contemporary feel with a monochrome colourway, along with interesting, textured finishes, such as white slatted timber wall cladding and an original, exposed, yellow-stock brick wall to the left, plus white tiling behind the bar, where vertically stack-bonded Solus Ceramics tiles create a great hand-crafted feel. The bespoke feature bar front is in splitfaced stone from Stone Republic, with a natural, honed grey basalt bar top from Natural Stone Projects providing a clean contrast. The furniture in this area is in butchers block oak and includes bespoke banquettes upholstered in pre-aged tan leather, designed by Goddard Littlefair, manufactured by Craftwood and located along the left-hand, exposed-brick wall. Cadogan family portraits, specially created for the space by artist Louise Seabrook, also line the left-hand brick wall. Hints of brass in this area - used, for example, as frame-lining within the bespoke glass and black-finish metal screens - link the space to the restaurant beyond, where brass is much more predominant, proportionally inverting the initial relationship of brass and black metal in this space. The ceiling is exposed and painted light grey, with architectural lighting on tracks, whilst feature lighting includes five industrial-feel brass wall lights from Istanbul-based Topos Workshop along the left-side brick wall, plus seven Nordlux Strap Pendant lights over the bar, which hang on leather straps. The flooring directly surrounding the bar is in a patterned ceramic tile from Royal Mosa in a bespoke mix of four different but complementary tones, ranging from cream through to chocolate, whilst the main flooring, also used on the stairs and in the former courtyard area, is a cobble grey FSC-certified brushed oak from the Solid Wood Flooring Company. Full-height glass and metal screens in black steel and brass, situated to either side of the steps leading down to the former courtyard area, provide drama and smooth the transition to the next part of the space. The first, courtyard section of the restaurant is filled with natural light, thanks to two large-scale feature rooflights, from which green and black blown-glass Amp pendants by Holloways of Ludlow hang, interspersed with bespoke spun-brass bowls full of

This subtle nature theme extends into the main restaurant area and café bar, where small pots feature throughout on the waiter stations and along the back bar. The restaurant has a contemporary classic feel, with traditional wood panelling to the walls in a fresh and light grey paint finish (alternating with antiqued bevelled glass panels), plus skirting and a dado rail, as well as restored fireplaces, linking it in feel to the overall hotel, which Goddard Littlefair has also revamped. This space features a furniture mix of dark green banquettes with a fluted leather finish, whilst all loose furniture, similarly bespokemade for the project, is in grey leather or else a mix of mohair and

leather in light green or dusky orange, with dark timber frames. Joinery, including waiter stations and ambient wine displays, is in smoked, charcoal-stained oak and is darker-toned to create contrast. Restaurant tables feature smoked charcoal timber tops and brass surrounds, whilst those in the central section beneath the skylights have white Carrera marble tops to reflect the light. Approximately half of the restaurant space beyond the courtyard is an area that can be separated off, via curtains in a striking House of Hackney floral fabric, for private hire. This 22-cover space hosts a striking, illuminated wall display of 300 wine bottles and is in a moodier dark green colourway than the rest of the restaurant, specially-designed to set off the display, with green walls, a green fireplace and green banquette chairs, with a pop of orange for contrast in the form of a number of orange-upholstered mohair chairs with leather backs and bases. Bespoke, shallow brushed brass chandeliers, custom-made for the project by Northern Lights, add glamour, with one situated in the wine room and the other in the rear restaurant section that follows and completes the scheme. The rear section is also the indoor restaurant entrance area for guests coming from the hotel side. A pendant light over a six-seater booth here is the Gubi Multi-Lite Pendant in brushed brass. Art in
this area of the restaurant is inspired by Sir Hans Sloane and includes a series of tropical birds, flowers and feathers, painted by artist Rebecca Jewell and curated by art consultants ARTIQ, hung either in ‘salon-hang’ clusters or as facing standalone pieces in the booth seats. Picture lights are from Vaughan Designs. Outside of the main restaurant and directly opposite is the 16-cover Curio space, with another space alongside, The Curio Lounge, which can be used for breakfast overspill or for a further 10 covers. Restaurant General Manager, Simon Smith (previously of Berners Tavern and Hakkasan) will oversee the wine list, which will feature over 195 BINS with a focus on unique and quirky bottles from around the world, whilst a concise list of classic cocktails designed by Salvatore Damiano, using British spirits, which will include a twist on a Gin Sour and the British Mule. “We want Hans’ Bar & Grill to be a real neighbourhood spot a place people feel just as comfortable popping in for a drink and a salad for lunch, or for a special occasion with friends”, commented Restaurant General Manager Simon Smith. “We are exceptionally pleased with the work Goddard Littlefair have done to create what is quickly becoming a favoured restaurant in Chelsea. Their design has utilised the space tremendously well and the aesthetic intricacies compliment the quirky nature of 11 Cadogan Gardens. ollowing years in development, Alton Towers Resort opened their latest thrill attraction earlier this year. Wicker Man is the first wooden rollercoaster to be built in the UK for 21 years and has been designed to reconnect riders with the primal essence of rollercoasters. Wicker Man is the world’s first rollercoaster experience that fuses wood and fire, and incorporates a giant, flaming Wicker Man who stands six-stories high. The Wicker Man structure dominates the very centre of the Alton Towers Resort, appearing to burst into flames as the wooden track races three separate times through the structure. The structure features a human head on one side and a ram on the other. Before boarding Wicker Man, riders embark on a journey into the world of the Beornen, a secret community living in the woods around Alton. Lured in by chanting, rhythmic sounds and unseen

eyes watching them, guests are chosen to take part in the cinematic ‘pre-show’ before braving the ride itself. Every ride houses 1 train, made up of 6 wooden carriages carrying 24 passengers (riders sit in pairs). Work on the track began in January 2017 and the final section of track was laid in November of the same year. The construction was led by US-based firm Greater Coasters International (GCI), the world’s leading manufacturer of rollercoasters. All the wood for the rollercoaster was sourced by CGI from a sustainable source in Pennsylvania. It took a total of 40 container loads and 7,500 tonnes of wood to make the ride.

Wicker Man is Alton Towers’ most ambitious project to date
The track is over 2,000 feet long and made up of 8 layers of wood, while 1.8 million screws and 65,000 bolts have been used to secure the structure. The safety of guests has been paramount in the design and build of Wicker Man, incorporating the latest in proven safety technology, rigorous testing and hundreds of training hours for ride operators. The ride was tested over 500 times using industrystandard water-filled buoys before opening to the public. There are 11 team members from the rides team working on Wicker Man at any one time, with 45 people on the Wicker Man team in total. Speaking earlier this year prior to the ride opening, Francis Jackson, Operations Director at Alton Towers Resort, commented: “Wicker Man is Alton Towers’ most ambitious project to date and we’re really excited to finally reveal our newest thrill attraction to the world. We’ve spent four years creating an experience that is truly spectacular by investing in the latest technologies which combine wood, fire and special effects to give riders the genuine feeling that they will be racing through flames. We can’t wait for everyone to experience Wicker Man when the park opens this spring.”
Wicker Man is the latest addition to Alton Towers Resort. The resort offers an amazing combination of rides, attractions, shows and themed accommodation. It is also home to the UK’s first Rollercoaster Restaurant, which opened in May 2016. The new restaurant is set below a vast rollercoaster track where diners can watch as their order tackles two gravity defying loop-theloops before dropping 8m/26ft – the equivalent of two double decker buses - down the tornado spiral to their table. From a standing start, each dish will compete to its final destination, racing along 400m of spiralling steel track. The restaurant can be used by both guests enjoying the theme park during the day and members of the public in the evening, after the theme park has closed. ccupying the 9th floor of the new Radisson RED hotel, Red Sky Bar is a completely new bar experience. Boasting some of the best panoramic views Glasgow has to offer, Red Sky Bar opened its doors to the public in May and is the latest addition to the ongoing revival of the Clydeside area. From signature cocktails and small plates to weekend sets by local DJs, the 120-cover Red Sky Bar has already proved to be a popular destination in a city with a thriving nightlife scene. Design by Mark Brunjes of award-winning local design consultancy CM Design, the bar’s bold interior was inspired by the idea of ‘turning

back to the river’. The result is a destination bar with an urban and unconventional vibe. Mark commented: “I was very excited to be invited to design the Red Sky Bar and terrace at the new Radisson RED hotel. It was a unique opportunity as I believe nothing like it exists in Glasgow. The design for the hotel is very bold so we decided on a contemporary classic design for the Red Sky Bar which would appeal to a wide demographic. “It was crucial that the design emphasised the panoramic views of the river Clyde, the Finnieston crane, the Hydro, the Armadillo, along with the headquarter buildings of the BBC and STV across the river.” Sweeping floor to ceiling windows wrap around
the bar area and there is a spacious outdoor roof terrace for guests to enjoy striking views of both the city and the river that built it. The bar front is made from Portora Gold marble, an elegant black marble with sleek gold veins running through it. Behind the bar, drinks and optics are stored on glass shelves and illuminated with LED lights. Any walls in the bar that are not glazed are tiled in floor to ceiling Calacutta gold porcelain tiles, a beautiful white marble with gold veins, contrasting to the dark bar front to give the bar a spacious, open feel. Adding warmth to the interior, a contemporary fireplace sits at the back of the bar encased in glass with modern artwork featuring above. Accessed by its very own lift, guests can expect to be well looked after by RED’s team of experienced bar staff who are responsible for mixing up Red Sky Bar’s signature cocktails. The aptly named RED SKY @ NIGHT blends St Germain Elderflower liqueur with gomme syrup, a twist of lemon and a splash of cranberry juice. Cocktails can be enjoyed alongside a selection of small plates and sharing boards. From halloumi fries and haggis bons to charcuterie and cheese boards, there is sure to be something to suit everyone’s palate. Philip Rodgers Design is an interior architecture practice, specialising in works within the commercial sector, with a specific focus on leisure, hospitality and corporate clients. The practice has been in operation for 32 years and within this time has worked with clients including IHG, Accor Group, Radisson Hotels and Andras House, amongst others, refurbishing public spaces and guest rooms. Most recently, Philip Rodgers Design has been involved with the work on Hampton by Hilton Belfast. On this project, Philip Rodgers Design provided the full interior architectural design for all the front of house public spaces and guest rooms. he Coach Complex in Banbridge, one of Northern Ireland’s most popular hospitality destinations, has unveiled a dramatic one million pound transformation to its renowned Coach Nightclub. The Coach Nightclub has a rich history and reputation having played host to a variety of high-profile acts and DJs. Earlier this year, the venue closed down for 6 weeks while a wide reaching renovation was carried out. Telling Premier Hospitality magazine about the transformation, The Coach Complex Director Victoria Patterson said: “What initially was planned as a production upgrade turned into a nightclub wide renovation. Having teamed up with award winning interior designers ODonell ONeill and together with Declan Diamond Architecture & Bespoke Transformations we undertook a full scale renovation of the nightclub space that involved closing the premises for 6 weeks. “A major aspect of the renovations was the production within the nightclub and this was looked after by the world leading team at Audiotek. They have previously provided installations for Hakkasan and Omnia Nightclubs in Las Vegas as well recently fitting out Omnia Nightclub in Bali.

“There is a great deal of attention to detail in the interior. All the furniture has been bespoke made, from marble tops to brass cabinets to steel walls. We’ve also got new hand-made neon signs, located in the entrance area of the nightclub, which form part of an Avicii tribute. There are a lot of areas in the club that really catch your eye. “They also invested a significant amount of the project’s budget into upgrading the club’s production and sound facilities. There are new
LED panels on the roof, which is something that has previously only really been seen in Los Angeles before. They have also invested a lot more in CO2 and pyrotechnics. One of my favourite new features of the venue is our brand new outside space. We imported four shipping containers and had them custom designed to work within the space with bespoke furniture providing a luxurious feel.”

With the work carried out we will be able to get the world class acts and DJs that we want over here. Most recently, BPR Contract Furniture were involved with The Coach. Walcon
Walcon is the UK & Ireland’s specialist shipping container conversion company with over 20 years’ experience in the industry. The company are experts in bespoke container conversions for both domestic and commercial projects and some of Walcon’s previous clients include Grand Designs and BBC Productions, as well as a vast range of international shows and trade fairs. Walcon was asked by The Coach to supply a unique outdoor accommodation area using bespoke converted containers, which included three sheltered seating areas, a bar and even a DJ booth! The company was delighted to work on the project with Gordon and his great team at O’Donnell & O’Neill Design, and were very eager to showcase their work for another high-end project and client. €400,000 refurbishment project at the iconic Imperial Hotel, Cork City, has been completed. The work saw 45 of the property’s bedrooms upgraded to ensure the ultimate guest experience at the Flynn family owned
hotel. The Imperial Hotel is Cork’s most centrally located hotel and has been part of the fabric of the city for over 200 years. The refreshed rooms include specially sourced, bespoke fabrics and furniture designed and sourced by leading Dublin based design company, Global Design Concepts. A vibrant colour scheme of orange, contrasting with light blue, has created an easy on the eye, inviting space for guests to enjoy

and relax in, while maintaining the character that the hotel is synonymous with. Julia Bialas, from Global Design Concepts, commented: “The brief was to redesign the 45 bedrooms to the highest standard, enhancing its luxury and at the same time staying true to the iconic building and maintaining the classical feel. “From the second a guest enters the hotel, they are embraced in its classic 200-year old architecture and sophisticated interiors. When designing the bedrooms, the main focus was to retain that elegant style whilst also creating a warm and inviting place in which hotel guests could relax and feel at home. The bedroom scheme was completed by combining rich, patterned fabrics in a vibrant orange and contrasting light blue colour. The use of bespoke fabrics and furniture has also helped to achieve a luxurious feel, as well as maintaining the character of the building.
“It was very important for GDC to be part of this magnificent project. Having built an outstanding relationship with Flynn Hotels over a number of years, we were more than happy to once again be involved in the refurbishment and offer the Imperial Hotel a turn-key renovation along with design services, allowing the hotel to stay open with minimal disruptions to guests.” Each room features King Koil Club Pocket luxury beds, and newly installed state-of-the-art flat screen, fully interactive, high definition capable in-room entertainment systems; while upgraded bathroom facilities include rain head showers, heated towel rails, upgraded luxury towellery from Lissadel, and upgraded Orla Kiely bathroom amenities. In addition, the hotel worked with ecoCOOL on a €100,000 upgrade to the air conditioning system. Over 100 bedrooms were fitted with the latest

hi-tech Mitsubishi air conditioning systems. This was a complete retro fit programme, fully project managed by ecoCOOL with little disruption to the hotel. The Imperial Hotel invested in a sophisticated new Lancer Glycol Refrigeration system by ecoCOOL. This system runs throughout the kitchen cold rooms, bottle coolers and draught beer in all bars. This new in-room system will reduce the property’s energy costs, and ensure the highest level of comfort for guests in their rooms. General Manager of the Imperial Hotel, Frits Potgieter explained the ethos behind the project: “I believe in the character and history of the Imperial, and what it means to the people of Cork. This project was a continuation of the way the property progresses and moves forward; but an important aspect of this was to remember the iconic stature of the hotel, and while upgrading, to stay true to that and maintain the classic feel.” Designed by Thomas Deane in 1813, the Imperial Hotel was initially used as commercial rooms for city merchants, and in 1816 the building was extended to serve as a hotel and coach yard for the visiting business people, traders and merchants. Down through the years the Imperial has welcomed a sea of famous faces including Charles Dickens, who gave a reading here; Daniel O’Connell, who addressed an assembly at the hotel; and Franz

Liszt, who performed a piano recital in 1841. Arguably, the hotel’s most famous guest was Michael Collins, who spent his last night in Room 115, before meeting his fate at Béal na Bláth on August 22, 1922. The works in the Imperial are part of a €3m investment in refurbishment works across the Flynn Hotel group’s four properties, which also include the Newpark Hotel, Kilkenny; Old Ground Hotel, Ennis; and The Park Hotel, Dungarvan; and this is not the first significant investment in the Imperial by the Flynn family, who purchased the property in 1998. Prior to the latest upgrades, €10m was invested in a redevelopment that included the addition of the hotel’s Escape Spa in 2006; while in preparation of its bicentenary celebrations in 2016, almost €1 million was spent on upgrades which included a new fitness suite for residents’ use, and the introduction of ‘Seventy Six on the Mall’, a new bar and food offering located just off the lobby, where the old ‘South’s Bar’ used to be. Designed and overseen by Westport-based interiors talent Emma Minish, she worked closely with local tradesmen as well as sourcing some of the additions to this cosmopolitan décor from various other sources at home and abroad. The overall achievement has been to create a restaurant with intimate spaces without compromising the proportions of the rooms, creating atmosphere while giving a timeless, luxurious feel to La Fougère. Emma Minish spoke to Premier Hospitality about the project.

What was the brief that you were given for this side of the project? “The restaurant had been in use for many years and was in need of a face lift. It was also in need of better lighting and natural light. “The space is made up of one very large room and two smaller rooms. The larger room felt very open and lacked atmosphere so it needed to be broken up into sections yet retain its flexibility for large groups and different dining formations. We wanted to create rooms within a room while maintaining that flexibility. “Other requirements of the brief were to create a breakfast buffet area, improve kitchen access, create service stations and to increase the seating as well as to incorporate a more striking reception area and storage for coats.”

O’Brien Interiors specialise in the design, manufacture and supply of soft furnishings. The company offers a full measuring and advisory service, covering made-to-measure curtains, curtain tracks, window blinds, upholstery and wallpapers. For more than 50 years, O’Brien Interiors has been providing its services to the hospitality, leisure and commercial sector, as well as for domestic clients. Past projects have included Castlecourt Hotel, The Plaza Hotel, Westport Garda Station, Harbour Mill holiday apartments, Mayo County Council Office, The Clew Bay Hotel, Westport House, Carraig Donn and Carraigahowley Castle, amongst others. Most recently, O’Brien Interiors has been involved with La Fougere. Working on this project, O’Brien Interiors manufactured and fitted curtains, blinds and poles, as well as conducted some re-upholstery work and supplied soft furnishings, including cushions and throws. Michael O’Brien, O’Brien Interiors, said: “At O’Brien Interiors we offer our customers a personal, bespoke service and one which provides real value for money. We are happy when we have happy satisfied customers.”

What was the time frame of the project? “The time frames are usually tight because there is a small window where business is a little softer so it has to be planned well ahead of time and all ducks in a row. I started designing and planning in September 2017, work began in January 2018 and we finished in the middle of February. Thanks to a project manager on site and a large, well-chosen work force we were not far off our target date.” What has the feedback been from the client? “The restaurant rooms have become very different spaces but have kept with the classic, timeless feel in the rest of the hotel. “I had been working with my clients on other parts of the hotel for over four years and my understanding of their requirements, taste and the functional needs of the spaces increased in that time so

I think and hope that overall, the clients are very happy with the restaurant. There has been great feedback which we are all very pleased about.” Having done several jobs for this client, what does it mean to you to continue working for them? “It has been a great experience for me to be involved in so many parts of the hotel. I have learned a huge amount in that time and hope that the design will withstand the test of time and be a great investment for my clients. I am very proud to have been involved with such a great team in such a lovely hotel.”

Manipulating the layout, dressing the spaces and making it look great is critical and key to the success of any venue, but when you step in and see people using a social space, in a way that hadn’t previously been used and watching it come to life is the best part for me.”

asholders London is a ground-breaking development of 145 apartments divided between 3 residential buildings. Each building is uniquely housed within a triplet of listed gasholder guide frames. Part of King’s Cross, the largest urban redevelopment scheme in Europe, Gasholders has been developed to create a dynamic counterpoint between new and old. The scheme provides 145 apartments, a private gym and spa, a business lounge and an entertainment suite with screening room, bar reception area and private dining room. The concept for Gasholders was created by award-winning architects WilkinsonEyre. The concept proposed three drums of accommodation at differing heights to suggest the movement of the original gasholders, which would have risen up or down

depending on the pressure of the gas within. A fourth, virtual drum shape, located at the centre forms an open courtyard, celebrating the conglomeration of the cast iron structures at their point of intersection. Chris Wilkinson, Founding Director of WilkinsonEyre said: “The gasholders are historic, industrial structures being redeveloped, but in a more enduring sense. We wanted to retain the presence of the structure but give it new meaning and use for the future. Working with circular geometry has resulted in really beautiful ideas. Work on Gasholders was completed earlier this year and the innovative project has received widespread acclaim. In June, it was named on the WAF Awards shortlist in the ‘Housing, Large Scale – Completed Buildings’ category. Apartments are accessed through a central courtyard, each drum volume with its own atrium and core. They are linked by a series of circular walkways that surround the courtyard. The circular nature of the buildings result in apartments that are laid out to take advantage of natural daylighting, with the living and bedrooms at the perimeter. The ‘pie’ shaped configuration of the grid forms open-plan apartments with expansive views and a variety of orientations. Externally, the cladding is composed of modular vertical panels of steel and glass textured with a veil of shutters which can be opened or closed at a touch of a button, to give shade and privacy

to the occupants. Each building roof is home to a garden that brings a slice of nature to the urban landscape. The triplet of Grade II-listed, cast iron gasholder guide frames were originally constructed in 1867. The triplet was abandoned as heavy industry moved to the outskirts of the city, and was dismantled in 2001 to allow for the construction of the Channel Tunnel Rail Link. The guide frames, including 123 columns, have been painstakingly restored by Shepley Engineers in Yorkshire. Despite being over 150 years old, the triplet was in remarkably good condition, largely preserved from decay by its 32 layers of historic paint.

he Thai Express chain has been on a fast track for growth since its first location opened in Guildford 5 years ago. Now, opening its fifth and likely most strategic location at Birmingham’s Grand Central, it’s clear that the Thai Express savoury street style cuisine has mass appeal. The Birmingham location was designed by interior design firm Faber Design and was completed alongside main contractors Elite Shopfitters. Faber’s vision for the new space blends two elements – one reflects the buzz of the city and Bangkok’s striking architecture, using concrete and metal materials. The other conveys the beauty and vivid colour of Thailand’s landscape, using natural materials such as wood and greenery. Uzma Pattani, UK Operations Director told Premier Hospitality magazine: “You have to stand out from the crowd and you have to use attractive imagery and great lighting so we have taken this opportunity to give the brand a facelift. When you go into the Birmingham store, you can see, compared to our other four locations, that it is a whole new look designed specifically for our UK clientele. “Since our logo is a lotus leaf we wanted to have that incorporated

into the store design. We have personally designed large pendant lotus flowers that are a feature in the new stores. Each one opens up slightly differently to add fluidity. ollowing a €1.5million investment, the 4-star Faithlegg Hotel in Waterford, Ireland, has unveiled its stunning new rebrand and refurbishment. Hidden in the tranquil countryside just twenty minutes outside Waterford City, the four-star hotel, part of FBD Hotels and Resorts, has now entered a new phase of its history. Faithlegg’s new brand positioning, entitled ‘Draws you in’ captures the history of the estate while also making it relevant to today’s world. The vision for the Faithlegg rebrand encapsulates all that the hotel has to offer and more. The brand’s visual rejuvenation captures a sense of old world charm in a way that is clean and polished. By respecting its heritage and yet delicately turning it on its head, the interior design has created a modern and fresh brand with a timeless quality. Interior designers for the scheme were Liz Harte Interior Design. As part of the rebrand, Faithlegg Hotel upgraded 14 master bedrooms in the old house and 58 deluxe bedrooms in the hotel’s new wing. These include new age decor with opulent luxury to coincide with the new brand positioning. All 14 master bedrooms in the Manor House, now called Master Superior and Master Deluxe, have fresh and vivid new colour schemes using pretty patterns paired with curtains and accessories in complimentary shades. Working with Sheila Aylward’s family business, the Waterford-

based Ormond Soft Furnishings, the charming rooms have been refreshed in a way perfectly in keeping with this luxurious and well-loved gem. In keeping with the distinctive character and personality of Faithlegg, colours vary from room to room, and include a warm heather and lilac colourway with box pelmets featuring a rich abstract pattern, a bold pink shade with a sweetly abstract floral design used in matching cushions and pelmets. An appealing duck egg blue velvet with a sumptuous Jacobean-style floral pattern and a classic seaside combination of French blue and fresh white with a stylised pattern of floral medallions complete the stunning effect.

The ground floor restaurant of the hotel was also upgraded. The new decor now offers an oldworld charm, blended with opulent luxury. Liz Harte of Liz Harte Interior Design said: “We have worked on schemes for the Faithlegg Hotel for a number of years and this was a particularly large project involving working on the bedrooms and suites, the function room and restaurant, bar and lounge. “We consulted with the hotel manager Liam Moran and his team and discussed the way forward for the hotel. They wanted to create a casual country style image. The bedrooms and bathrooms were completely refurbished including installing new tiling and power showers in the bathrooms. Some of the beautiful original furniture in the suites was retained and we worked around this.” In the restaurant, the design was geared to highlighting the ornate mouldings and cornices on the high ceiling. On entering there is a pleasant reception area with a fireplace. The project was carried out within a tight two week timeframe when the hotel was closed, and

a major challenge was getting the work completed within this period. Liz concluded: “We loved working on this project. he newly refurbished Fifth Floor Bar at Harvey Nichols Knightsbridge has opened its doors, complete with a redesign and a revamped drinks and cocktail list. The renovation took three weeks to complete and the new design concept offers customers a space to relax in a sophisticated setting. Inspired by rich earthy tones and muted shades of pink and grey, the new Fifth Floor Bar has been transformed into a tranquil space. The metallic, soft suede and raw steel furnishings adds a modern touch to the refurbished Bar, while retaining the timelessness atmosphere found throughout the rest of the store. Harvey Nichols worked closely with Keane Clarkson, one of the UK’s leading interior design agencies, to create the space. Speaking to Premier Hospitality, Shaun Clarkson commented: “The banquette seating is an undulating burnt orange shape, which runs completely round the room. A mural on the ceiling also acts as a guide through the space. They are the two main, big features. We’ve used a Christian Lacroix carpet and then because it’s quite a feminine, pink colour we’ve used hues of copper, marble and wood.”

art of Westfield’s £600m retail expansion, Puttshack is a completely new venture that fuses traditional mini golf with the latest technology for an experience unlike any other. Developed by the Social Entertainment Ventures, the company behind pioneering ping pong venue Bounce, Puttshack comprises four innovative and interactive nine hole courses, a feature bar and a restaurant. The two-storey venue has a total capacity of 750 and opened in June. By embracing 21st technology, Puttshack has turned mini golf on its head. The Trackaball feature takes accusations of cheating and arguments over scorecards out of the equation. Trackaball means each ball knows who it belongs to, how many times it’s been hit and most importantly, who is winning. Scoring has also been revolutionised with a brand new system where the highest score wins. Transformed from a two-hundred-year-old jute mill, the 102-room hotel, designed by Graven, sits between the waterfront and the heart of the shopping district. Rich in history, the first spinning mill was built on the site in 1822 by the Baxter family who became one of the world’s largest linen manufactures. Ross Hunter from Graven told Premier Hospitality: “We were really excited by the buildings because these kinds of buildings are fabulous. They have big windows, stone floors,

the columns are cast iron and the big open spaces always look spectacular. Much of the building that we worked on has exposed brick arch ceilings and they look fantastic so we were keen to maintain those and keep those visible. We fought really hard to persuade the project that it was important to maintain and expose as much of the existing fabric as possible.” Respectfully renovated, the hotel’s three room designs are inspired by Dundee’s past and present and feature the original vaulted brickwork ceiling. The Dundee Cake Room brings in discreet marmalade motifs together with jute curtains. The Dandy room is inspired by famous publishing house DC Thompson’s ‘Black Bob’ - a plucky sheepdog that always saved the day. Traditional sheepdog commands are hidden in the dado strip. The Gaming Room is reflective of Dundee’s thriving computer game industry, the birth of Grand Theft Auto. Secret gaming codes can be spotted within the dado strip and literature found within the room celebrates Dundee’s unique links to the video game industry. Beds are finished by local textile designer, Hilary Grant, whose work is inspired by waves breaking on the River Tay. Hotel Indigo Dundee’s restaurant and bar, Daisy Tasker, offers guests a contemporary spin on traditional Scottish dishes with an abundance of fresh seafood, prime cuts of meat and locallygrown fresh vegetables. It is named in honour of a much-loved weaver who organised activities for the jute mill workers and, true to the original Daisy’s sociable spirit, the restaurant is set to be the ideal spot for family and friends to eat and drink together. Ross added: “Everybody is really happy with the end result and the feedback has been great. There are a lot of objects and in

there that are recognisable so Dundonians should be able to go in there and have a feel for what it was. agamama has opened its first new look and feel location in Chelmsford. The Japanese inspired restaurant’s arrival into Chelmsford has been long-anticipated and not only will it be trialling the brand’s fresh new look it will also be the largest wagamama restaurant in Essex. The subtle change in the restaurant design will introduce a modern take on some classic Japanese and Southern Eastern architecture and interiors. wagamama design director Mark Standing said: “Our philosophy of ‘kaizen’, meaning good change, is embodied in our Chelmsford restaurant where we have brought our Japanese influence to life through a number of design cues.” Famous for its cult classics such as chicken katsu curry, chilli chicken ramen, yaki soba, and beef donburi wagamama will also open with new dish the ‘vegatsu’, the vegan take on their legendary katsu curry. Praised as one of the biggest screens in Merseyside the Superscreen offers state-of-the-art laser projection and sound. he latest venture from global entertainment brand Ministry of Sound, The Ministry is a unique combination of a private members club and collaborative workspace. The Ministry opened in London in July 2018 and was designed by award-winning architects Squire & Partners. Located in a vast Victorian warehouse on Southwark’s Borough Road, the venue is the new home for a carefully selected community of creative companies and professionals working in music, culture, media and technology. Standout features include a seventy-foot bar spanning the entire ground floor – serving tea, coffee, juices & smoothies by day and wine, beer and cocktails by night. Other unique facilities include a full table service restaurant, immersive technology studio, a 36-seater cinema, sound proof production suites and serviced meeting rooms where you can order lunch at the push of a button. The Ministry will also boast a large events space and year-round outdoor courtyard serving coffee and drinks to members and their guests. The design of The Ministry, developed by Squire & Partners, stays true to the Ministry of Sound brand with bold, raw elements contrasting with a layer of premium finish. Beyond a discreet reception area, the entire ground floor area is utilised as a generous social space with areas for eating and drinking. Privacy is afforded by a series of circular curtained booths, and apartmentstyle meeting and drinking rooms. The feature bar, made out of concrete and copper piping, leads out to an urban garden courtyard with an outdoor bar and a fire pit. Both the bar and the social spaces have been designed with flexibility in mind, so they easily change from morning to night. The walls are adorned with bold contemporary artwork that has been curated in consultation with Christopher Shake and Charlie Smedley. Moving through the building, The Ministry workspaces are located between the first and fourth floor. The spaces enjoy generous

natural light and are suitable to a variety of organisations, from individuals to SME’s and established companies. Desking is combined with areas of open and closed workspaces, rooms for meeting and informal dining, and comfortable breakout areas. A series of oversized rugs feature bespoke patterns created by Squire & Partners based on original motifs within the building, and south London design duo Eley Kishimoto who took inspiration from music, energy and the heritage of The Ministry of Sound. A series of quirky phone booths have been created for times when total privacy is required. Circulation spaces between the floors reveal original terrazzo stairs in hues of pale green and pink, and exposed concrete and steel structure. T
he latest addition to the Thwaites portfolio, The Beverley Arms opened to the public in July 2018. The Beverley Arms was once Beverley’s flagship coaching inn, welcoming guests since the 17th Century, and now Thwaites has put it back in its place in the heart of the thriving East Riding market town. Over £6m has been spent turning the historic building into a stylish place to eat, drink and stay with striking interior design and entertaining spaces. It now boasts 38 bedrooms, a 68-seat restaurant bathed in natural light, 2 private dining/meeting rooms, a modern bar and an outdoor courtyard. Operations Director at Thwaites, Steve Martin, said: “The transformation has been extraordinary- from the moment you walk in through the doors you know you are somewhere special. Every time I go in I spot new things in the design, it’s really stunning and well thought through.” Thwaites has been careful to retain as many original features as possible, like it does with so many of its restoration schemes as it prides itself on having characterful properties. This included the arches made famous by Elwell in his paintings of the Beverley Arms kitchen 100 years ago that is now a feature hidden in a new room.

This is Thwaites’ first property in Beverley, so a new Team has been recruited and will be led by local General Manager Chantell DickinsonClark, who grew up and lives in the town. The development has created 70 jobs and the new team underwent training in time to be ready for the grand opening on July 30. The Build Having been left empty and exposed to the elements for over five years, The Beverley Arms was in need of a significant amount of work to complete its transformation. Having previously worked on a number of Thwaites projects, main contractor Philip Lally Ltd. began working on site in May 2017. To find out more about what the work entailed, Premier Construction spoke to site manager Aaron Andrews:
How did you get involved with this particular project? “We’ve done projects with Thwaites over the last five and half years as one of their main contractors. We’ve moved from job to job – different hotels, refurbs, new builds etc.” Did the building need a significant amount of work when you first got involved? “Yes, it was a complete rip out including complete rewiring and complete plumbing. Half of the building was demolished and then rebuilt. The remaining, listed building was revamped to what it is now.” Tell us a bit more about your work on site. What were the main aspects of the project? “When we took over, we took over a very dilapidated building. It had been left to run down over the last five or six years. All the plasterwork came off, there was a complete re-plaster and rewire of all the existing bedrooms, the existing pub area and existing restaurant area. A new orangery/conservatory was built and a new

bedroom block that houses fifteen rooms plus a very large kitchen was also built. That new build included 20 metre piles around an existing basement. We also had archaeological digs on the site as we were working just to make sure nothing here and there were remnants of old buildings.” What were some of the main challenges on the project? “The main challenges were incorporating an existing building from 1600 into a new build from 2016. You are then trying to develop two buildings that are joined together, so you’ve got the old way of building with the new way of building. The main challenges we found were in the ground with the piling and the massive amount of steel work we had to put in because we couldn’t guarantee the old structure. There were also certain areas we could do very little because it was a conservation area.” Andy finally, how important is your relationship with Thwaites? “We’ve worked with Thwaites for a number of years now and they are one of our main clients. We get a lot of work through them and it’s good to keep that relationship going. Terry Box, Falcon Joinery, said: “Our involvement with The Beverley Arms Hotel began in September 2017 with several site meetings. Subsequently, we were awarded the privilege of manufacturing the orangery, pergola and staircase, as well as various vanity units for the toilet areas and bedrooms of the hotel.” Terry added: “We are a family run joinery business with a wealth of experience in the pub re-fit trade. We are continually adapting to the ever changing requirements of our clients, to ensure that we can deliver the best service possible.”
NSM Group
The NSM Group is a commercial painting and decorating business based in Warrington that specialises in commercial, interior and exterior decoration to hotel and pub chains, education authorities, landlord portfolios and retail outlets. With business commencing in 2013, the company has completed work on a number of projects for a variety of clients including Mitchell & Butler, the Innkeeper’s Lodge, Green King, Thwaites, CBRE, Manchester University and Liverpool University and has completed work on schools operated by Salford Council, Wigan Council and Liverpool Council’s education authorities. The company recently worked at The Beverley Arms Hotel where they carried out external decorations, internal decorations to the pub and restaurant and decorations to the back areas and new accommodation block to complete the hotels refurbishment and upgrade program. Re-inventing pub dining
T
hree brand new Cookhouse and Pub venues have been completed for Whitbread as part of an ongoing national rollout to a new design concept. The brand, which won ‘New Pub & Restaurant Concept’ at this year’s Menu Innovation and Development Awards (MIDAS), aims to re-invent the pub dining experience, delivering the quality food and service of an informal, all-day casual restaurant, with the relaxed vibe and affordability of a pub. The new venues – in Rhyl, Cornwall and Cheshire – were designed by JMDA Ltd, who created the overall new-look concept for the brand, working closely with the client. The 185-cover Rhyl Cookhouse and Pub, located near the seafront, occupies the ground floor of a new building shared with a new Premier Inn and has a separate entrance. Alec Mackenzie, interior designer at JMDA said: “The interior includes a new theatre kitchen and 61 single seating booths for hotel guests, together with further booths, loose furniture, a bar area with feature fireplace and a breakfast counter for hotel guests. The breakfast counter is concealed by specially designed bi-fold doors at other times of the day. The bar and breakfast counter tops are in Silestone.” The overall colour scheme is in the teal, coral yellow and mushroom palette selected as part of the overall design concept for the brand. Floors are in a combination of timber, bespoke carpeting and wood effect vinyl, with hexagonal terracotta tiling near the breakfast counter. Alec Mackenzie said: “Main contractors for the interior fit out were Medlock Construction, who did a very good job and also constructed the entire new building. The client was happy with the result.” In Fraddon, Cornwall, the new 218-cover Cookhouse and Pub was created through the refurbishment of a former Brewers Fayre site. The works included a combination of stripping out of the old interior and making good of other areas. This

included retaining and over-cladding the existing chef’s counter in reclaimed scaffold boarding. Alec Mackenzie said: “The original back bar was amended to include a new display of spirits and the bar frontage was over-clad with a mixture of reclaimed scaffold boarding, together with teal coloured herringbone effect panelling to the coffee counter section. A new viewing window was also installed in the wall adjacent to the kitchen, so that guests can watch their food being prepared.” The original fixed seating was re-upholstered to the brand standards and new electronically operated timber shutters were fitted to conceal the original breakfast counter when not in use. New pendant lighting and new wall light shades were also fitted, as well as new bespoke carpeting and vinyl wood effect flooring. Again, the same new teal, coral yellow and mushroom palette is featured in the colour scheme. Alec Mackenzie said: “The project was carried out by Myriad Construction who did a really good job and the client was pleased with the project on handover.” Also created through the refurbishment of a former Brewers Fayre, works to the new Cheshire Cookhouse and Pub included the introduction of new bespoke carpeting and Antico wood effect vinyl flooring, new pendant lighting, and the re-cladding of the bar in reclaimed scaffold boarding, with new teal coloured herringbone effect panelling to the coffee counter section. A new section of fixed seating was installed in the bar, which also includes both refurbished existing and new furniture, including tables, fixed and loose seating. A new breakfast counter was installed near to the kitchen, together with timber shutter bi-fold doors to conceal it when not in use. Again the new concept palette of teal, yellow and mushroom is much in evidence. Alec Mackenzie said: “The main contractors were J. Wilkinson who did really well with the project, and the client was pleased at handover. “So far we have handed over eight of these new venues, with others in the pipeline. n impressive project to refurbish the public areas and bedrooms of the Green Hotel (formerly the Stephen’s Green Hotel) on Dublin’s Stephens Green has just been completed, creating a stylish and sophisticated new look for the three star plus venue. The interior was designed by Bryan O’Sullivan Studio, with McStan as main contractors. The project involved the complete re-design of the ground and basement level public areas, as well as the re-decoration of the 100 bedrooms, suites and corridors and the re-design of all the bedroom ensuites. The project also added a new restaurant and bar, and a reading room where people can work. Bryan O’Sullivan, founder of Bryan O’Sullivan Studio said: “The aesthetic has a simple yet sophisticated palette that mixes some traditional elements such as the painted timber panelling, high gloss bar front and patterned terrazzo floor, with some more

contemporary finishes like the concrete wall cladding and marble monolith reception desk.” As the hotel is in a modern building, the design features a good mix of the contemporary with some classical elements to make the space feel comfortable. A fresh colour palette of whites, greens and black was used creating a look that is simple, but has impact. Bryan O’Sullivan continued: “The hotel is a hive of activity; the restaurant bar area serves from breakfast right through to evening drinks, so we’ve designed a really flexible space. We’ve also added a reading room purposefully located next to the windows, so that there’s a sense of activity and exchange with the city outside. “We are delighted to see the completion of the project, it’s been rewarding to work on, and we

hope that visitors and locals alike enjoy the spaces. “We recently completed the Tamburlaine hotel in Cambridge, which has parallels with the Green Hotel. Cambridge is a fabulously popular city, as is Dublin, and our aim was to design public spaces that would be warm and welcoming.” The project is part of The O’Callaghan Hotel Group’s recently completed €30 million facelift for three of its Dublin properties, with the other two being the Alexander and the Davenport. The move was part of a €100 million investment programme which includes a significant amount already spent on building its new 155-bedroom Tamburlaine Hotel in Cambridge. The O’Callaghan Hotel Group is one of the leading privatelyowned hotel groups in Ireland. The group was established in 1990 with the opening of their first hotel, The Mont Clare Hotel in Dublin. Since then, the group has opened their three additional hotels in Dublin. Each hotel is unique in its style and offerings, from traditional to modern-contemporary and boutique style. While developing its portfolio in Dublin, the O’Callaghan Hotel Group continued its expansion internationally by opening two international properties – the Eliott (Gibraltar) in 1996 and Tamburlaine (Cambridge) in 2017.

Most recently, Hen’s Teeth has been involved with the work on The Green Hotel in Dublin. Commenting on the project, Greg Spring, Hen’s Teeth, said: “Working closely with the Bryan O’Sullivan Studio, we curated the art for three spaces in the hotel. It was amazing to work with the studio and choose works that corresponded to their stunning interior plans.” Greg added: “At Hen’s Teeth we pride ourselves on our ability to offer affordable, accessible and contemporary art by some of the world’s most exciting and talented artists, hopefully putting a smile on people’s faces with the work we create and the exhibitions we host.”
Belfast’s new ‘jewel’
F
ollowing the largest and most expensively constructed hotel project ever seen in Northern Ireland, the 23-storey 300-bedroom Grand Central Hotel is now open in Belfast. Residents of Belfast have watched over the past two years as Windsor House was transformed from an unloved office block to the key feature on the city’s skyline, with its unmistakeable seahorse logos and shimmering charcoal panels visible across the city. The hotel was constructed on time and on budget by local builders Graham’s of Dromore, with design being led by Belfast architects RPP. The Bank of Ireland has assisted with project funding. Many local firms can take great credit for their part in ensuring the doors opened on schedule. Located on Bedford Street, this is Northern Ireland’s tallest hotel and brings a new era of glamour and grandeur to the heart of Belfast. This Grand Central is the second of its kind; a contemporary reincarnation of a Victorian hotel with the same name that stood on Royal Avenue from 1893 to the 1970s. Inside, historic stories inspire contemporary design and luxury is elevated by local authenticity. The new branding for the hotel incorporates the seahorse, a nod towards Belfast’s Coat of Arms and a celebration of the City’s Maritime history. A legend reborn,

the Grand Central Hotel is a new jewel for Belfast with an old soul. It is by one of Northern Ireland’s leading poets, Paul Muldoon, who used to work in the building when at the BBC in the 1980s. It is entitled “Hymn to Belfast” and speaks to the new era in which Belfast now finds itself, acknowledging its past glories, and the spirit of its kinsfolk who are now transforming its fortunes once again. With its dramatic “double height” space on the ground and first floor levels, the hotel is international in outlook, and cosmopolitan in

feel. No expense has been spared on its marble flooring, its plush fabrics and its dramatic interior lighting. The £53 million committed to this project by Hastings Hotels has created an unmistakably upscale venue for locals and visitors alike. This seahorse is most vividly depicted in the hotel’s main restaurant in a specially commissioned eye-catching illustration which deconstructs the official Belfast crest, featuring Chichester’s wolf and the seahorse and their contribution to the founding of the city.

Creating experiences that captivate and inspire Tandem is an award-winning interpretive design company, established in 2002, with a reputation for creating worldclass visitor and brand experiences. At the heart of Tandem’s success is a team of interpretation planners, researchers, creatives and project managers who embrace the challenges of working on wide-ranging subjects. Previous projects have included: the Seamus Heaney Man & Boy exhibition at HomePlace (winner of ‘Best Visitor & Interpretation Centre’ at the 2017 AHI Awards); interpretive graphic design at Titanic Belfast (named ‘World’s Leading Tourist Attraction’ at the 2016 World Travel Awards); and, more recently, interpretation at Belfast’s Titanic Hotel, where Tandem drew out stories that imbue the hotel with a distinct sense of place and context. Interpreting the Grand Central Belfast For the Grand Central Tandem put the hotel at the heart of the guest’s Belfast experience. Sitting at the centre of Belfast’s historic Linen Quarter, the company understood the importance of the hotel’s location. This is demonstrated in every room where guests will find their copy of the Grand Central Hotel heritage book; richly illustrated, it tells the

key stories of Belfast. Further demonstrations can be discovered integrated into the hotel’s interior design scheme: mirrors are etched with drawings of nearby historic buildings; suites are named after significant linen families; an illustrative frieze in the Seahorse Restaurant interprets the city’s coat of arms; an art piece made from tableware saved from the original Grand Central, that once stood just a short distance away, is installed close to the Seahorse Bar. At the hotel’s entrance interventions include a large typographic screen and engraved paving presenting verses from a specially commissioned poem, ‘Belfast Hymn’, by Pulitzer Prize winning poet Paul Muldoon. A client with vision Tandem has had a long relationship with Hastings Hotels, a business that understands the value of interpretation within the hospitality environment. Interpretation can galvanise a sense of place – through the stories it presents, guests enjoy their stay more and leave with stronger memories. As interpretive designers, Tandem thrives on opportunities like this.

North Lakes Hotel Spa refurbishment
T
he North Lakes Hotel & Spa in Penrith has recently undergone a refurbishment which includes an upgrade to the restaurant and bar, reception area, gym, ground floor meeting room, breakout space and all bedrooms and external areas, as well as undertaking a £175,000 transformation of the sites gym. Restaurant and Bar Fyr is described as ‘unlike anything else in the area’, as the cooking centres around an open fire within the restaurant where meat and fish are grilled in front of guests. As part of the restaurant refurbishment walls were taken out, timber was been stripped back and revived, all furniture was removed and replaced and decorators created a new look and feel. There are now booth seating areas that are perfect for families and groups and around the restaurant there are features that grab the customer’s attention, including a rowing boat hanging from the beams and a floor to ceiling hand painted mural of a Lakeland scene. A major milestone of the refurbishment was the installation of the grill, which was made bespoke for North Lakes Hotel & Spa. A former private dining area was also brought into the mainstream restaurant and the existing fireplace is being used for the grill. General Manager Anthony Penny said: “The design is incredible and very much in keeping with the local area. We’ve even changed

the entranceway to the restaurant by extending the mezzanine area and relocating stairs so there is a much better view.” Fyr opened to the public in May. The Hotel & Spa’s gym has also undergone a transformation with the whole gym being redesigned with everything brand new – from the floor and walls to all of the equipment inside of the gym. The hotel is also making the best use of connected technology by introducing stateof-the-art technology equipment so individuals can track their workouts on cardio, strength and functional machines. Spa Manager Jo Brown said: “This is the most substantial investment that has been made in the gym and we are delighted with how it has come together. “We have the best equipment on the market, which is fantastic news for all our members. They will be able to connect their phones to track workouts and get reports sent directly to them so they can keep track of how they are doing.
We’re also able to offer leagues to everyone, which will appeal to anyone who is competitive.” For those who don’t have a mobile phone, the gym offers wristbands with the same connected technology. Re-opened on 7 April, the newly renovated gym facilities add to the already popular spa, pool, treatment rooms and relaxation lounge. Work on the refurbishment was undertaken by Thwaites interior designer Rachel Wootton, in conjunction with JS Design Partnership.

he £1m refurbishment of Hotel Indigo Birmingham is complete. The investment included a huge renovation of all 52 guest rooms including the reception and lobby areas.
